ReSqueeze Pouch Recipe - Beet Carrot Ginger Purée

Beet Carrot Ginger Purée:  2 Beets 4 Carrots Few gratings of ginger Peel and roughly cube carrots and beets, drizzle with olive oil and roast on baking sheet in oven for 30 min at 400 degrees. Let cool and put into food processor. Add ginger and blend to desired consistency. Yields approx 8 oz.  Contributed by the wonderful mother and photographer Cristin More.

Asparagus Lentil Salad in a Purée! One bunch of Asparagus Three small yellow potatoes, cubed 2 c. cooked green lentils A dash of dill Preheat oven to 425 degrees. Roast asparagus (15 min) and potatoes (30 min, turning once at 15 minutes) in oven with a drizzle of olive oil. Combine cooked lentils, dill, potatoes, asparagus and a half a cup of water in blender and blend to desired consistency.  Adapted from this recipe. ReSqueeze Pouch Recipe - Sweet Potato Apple Purée

Ingredients 1 sweet potato 3/4 c applesauce water Preparation Instructions Scrub sweet potato clean. Puncture a few times with a fork. Place on paper towel or microwave-safe dish and microwave on high for 4-5 minutes, turning over potato half-way through cooking. (*Alternative: Preheat oven to 375 F, bake for 45 minutes or until soft). Once cooled, split the potato and scrape out the flesh with a spoon, place into a bowl or blender. Mix in applesauce.
